Sage (Salvia officinalis)

Sage is a hardy, aromatic perennial herb with soft silvery-green leaves and a warm earthy flavour. A favourite in herb gardens for centuries, Sage is easy to grow, drought tolerant, and highly valued for both culinary and traditional medicinal use.

This shrubby evergreen herb can live for many years and grows beautifully in garden beds, borders, and containers, adding both texture and fragrance to the garden.

In the Kitchen

Sage is best known for its rich savoury flavour that pairs perfectly with poultry, stuffing, roasted vegetables, sausages, pork, lamb, and creamy sauces.

The leaves can be used fresh or dried and are delicious fried in butter until crisp, adding flavour to pasta dishes, pumpkin, potatoes, and risottos. Sage also complements cheeses, breads, soups, and herb blends beautifully.

Because of its strong flavour, Sage is generally used in moderation to enhance dishes without overpowering them.

Health Benefits

Sage is rich in antioxidants and contains vitamins A, C, and K, along with calcium, magnesium, potassium, and iron. Traditionally, Sage has been used to support digestion, soothe sore throats, relieve coughs and colds, and promote overall wellness.

Cultivation

Sage is exceptionally easy to grow both inland and at the coast, tolerating dry conditions, moderate frost, and windy areas once established.

Plant Sage in full sun in fertile, well-drained soil with good airflow. It thrives in slightly alkaline soil and dislikes cold, wet conditions or overwatering.

Plants grow quickly to around 50 to 60cm tall and are ideal for herb gardens, mixed borders, and containers. Water moderately and trim plants lightly after flowering to maintain compact healthy growth.

Harvest leaves regularly for fresh use, or cut stems just before flowering when the essential oil content is highest. Leaves can easily be dried and stored for later use.

Companion Planting

Sage grows particularly well alongside rosemary and makes an excellent companion plant for cabbages, carrots, and other vegetables by helping to repel cabbage moths, carrot fly, and whitefly.

Its attractive foliage also combines beautifully with flowering perennials and ornamental shrubs in mixed garden borders.
